Sushi - Let's Roll

  • Learn how to roll four different types of Maki, as well as the unique Gunkan sushi
  • You’ll learn methods including how to roll sushi, make sushi vinegar, prepare sushi rice step-by-step, alongside presentation techniques

Japanese Home Cooking

  • A tasty introduction to a typical, generous Japanese everyday meal
  • Prepare a range of dishes such as seasonal vegetables, Japanese and main dishes using fish, meat or tofu
  • Learn how to make different types of sauce, steam Japanese rice or noodles and prepare Japanese Dashi (stock) to make soup

Ramen 3 Flavours Class

  • All about Ramen, a deceptively simple dish, when a few tips and tricks are used
  • Compose ramen from scratch (save the noodles). Starting with mastery of the dashi (stock); through to mouth-watering toppings and garnishes
  • Three types of Ramen will be covered — Miso (soya paste), Shoyu (soya sauce based) and Tan-tan (spicy pork)
  • Every ramen class ends with enjoying the results from the recipes learned

Miso Making

  • Miso brings an Umami flavour to dishes, that give many Japanese recipes their unique flavour.
  • From pantry to palate, this workshop will teach you which ingredients to use and the basics of the fermentation process
  • At the end of the workshop, you will have made approx. 1/2 kg of miso paste that you can take home and store, ready for use in 6 months

Vegetarian Ramen & Gyoza

  • A healthy, vegetarian introduction to full flavoured ramen and gyoza
  • The class features two types of gyoza (pan fried and in a broth) and spicy ramen with a cauliflower, tofu topping
  • Learn how to prepare the core ingredients, make the stock and how to develop umami flavour

What Can I Expect

Join one of Yuki’s Japanese cookery classes! These two and a half-hour lessons take place at Japanese chef, food writer and teacher Yuki Gomi’s south London kitchen and will teach you just how simple, delicious and nourishing Japanese food can be.

Yuki grew up in Japan in the shadow of Mount Fuji, learning how to make traditional Japanese dishes using seasonal products, mostly homegrown. As an adopted Londoner, Yuki’s aim is to bring her taste of Japan to you in the capital.

Her book ‘Sushi at Home’ published by Penguin showed us how making sushi at home is very much do-able and these Japanese cookery courses have the same aim. With Yuki’s relaxed, patient and very amenable teaching style, these classes are a delight.

We have a variety of classes for you to choose from, including Ramen, Gyoza, Miso, Sushi, Katsu and more. You’ll be making everything ‘from scratch’, so there’s no reaching for the ready-made curry sauce to go on your Panko-crispy Katsu Chicken!

As well as being completely hands-on, what we love about Yuki’s classes is that you will learn lots about the traditions of Japanese cookery. From learning about the different soya-based misos, to the importance of rice as a staple food.
